Travel | Spring Hygge with Kimpton Hotels

First things first, what in the world is hygge?! Pronounced "hoo-gah", it simply means an approach to living that embraces positivity and enjoyment of everyday experiences. I'd never heard or seen this word until Kimpton Hotels contacted me to partner up on their Spring Hygge campaign, but definitely see how they strive to incorporate this into every aspect of their properties.

If you follow me on social, you know that Ryan and I  have been traveling A TON for work lately. This past weekend we headed down to the Portland waterfront for a little staycation at the Kimpton RiverPlace Hotel. I've never really had any reason to stay at a hotel in Portland since moving here, but the accommodations at RiverPlace were great. Just walking in to the room you get a refined lodge feel with warm tones, a welcoming fireplace, and a gorgeous view of the river. They've taken all the details into account even when curating the yummy smelling Atelier Bloem toiletries, signature Kimpton Candles, and my favorite, bathrobes! (Hotel bathrobes are literally THE BEST!)

After checking in, we promptly grabbed a couple bicycles and rode up and down the waterfront.

This is an area of Portland we don't really think to visit, but it really is gorgeous. We knew a storm was coming so we promptly grabbed our umbrellas and walked down the waterfront to grab coffee and a snack and wait for the rain (it also hailed!) to go away. Living in Portland, I always carry an umbrella with me because the weather can be so unpredictable, but lucky for anyone staying at RiverPlace, all rooms come with umbrellas if you're like me and don't care for rain jackets :)

We had a few minutes before our dinner reservations at Three Degrees, so of course we headed to the bar to grab a couple cocktails.

I admit that I don't always think to go to restaurants in hotels when trying to decide where to grab a meal. However, the experience and food we had at Three Degrees was nothing short of AMAZING! We were instantly greeted by Chef Lauro Romero at our table. He totally hit us in the tastebuds by bringing a rockfish ceviche that took us back to deep sea fishing in Mexico to make our own on a past vacation. We then had a little taste of the special, halibut, which too had a bit of subtle Mexican flair.

We were then presented with a dish I would eat -- dungeness crab toast with smashed avocado and pickled fresno peppers. To die for!

Soon after we happily received our main dishes. I went with the Pan Seared Salmon with pea gnocchi, english peas, cipollini soubise, and smoked mussel salsa verde. Ryan landed on the Grilled Pork Chop with sun choke, pea sprout & apple slaw on top of the most delicious mole dojo (you know I had to dip my fork into that mole!)

As if this wasn't enough food, we ended the night with cheesecake made from local Ava cheese. Needless to say we went to sleep full and happy.

I'm not one to ever order room service or breakfast in bed, but the next morning we decided to indulge just a little bit more and go for the food gold.

We went home that day well rested and ready to take on the week ahead. So thankful to Kimpton for inviting us to partake in such a lovely weekend and can't wait to book our next stay!
